This easy shredded chicken taco salad is one of the simplest ways to enjoy a filling, delicious lunch. You can use leftover fajitas, or make a whole fresh new batch to really get your taco salad hopping!

Plus, it’s just a fun way to enjoy one of my favorite restaurant meals at home.

What You Need to Make Shredded Chicken Taco Salad:

This is a very simple chicken recipe that you really can’t mess up, no matter how hard you might try. Seriously, anyone can make these, as long as you can follow some basic instructions. Here’s what you need:

  • 1 1/2 lbs chicken thighs and legs deboned
  • 1 sliced bell pepper
  • 1 sliced onion
  • 1 cup shredded cheddar
  • 1 tsp cumin
  • 1 tsp garlic powder
  • 1 tsp salt
  • 1/2 tsp cayenne pepper
  • 3/4 cup cherry tomatoes
  • 1 head Romain lettuce
  • 1 cup cooked black beans (canned is fine)
  • 1 avocado

How to Make Shredded Chicken Taco Salad:

Step 1

Place chicken, sliced bell pepper and sliced onion in a pan over high heat. Saute until the chicken is cooked all the way through.

Step 2

While the chicken is cooking, slice your cherry tomatoes in half and slice your avocado into strips.

Step 3

Place chicken in a bowl and shred it using a hand mixer. Add seasoning and stir until the chicken is evenly coated.

Step 4

Add Romain lettuce to the bottom of 4 bowls, then add about 1/4 cup of black beans.

Step 5

Top the beans with chicken.

Step 6

Add all of the other toppings to make the salad your own!
