I love this recipe for easy chicken fried rice. It’s so full of flavor, just like restaurant style fried rice. In just a few minutes, you get this awesome meal that the whole family will love–even quicker than ordering take-out!

For the most part, my kids are willing to eat a fairly wide variety of food, but sometimes they’re a bit picky–and chicken fried rice is one of those things that they just don’t like if it doesn’t taste like it came from a restaurant.
But, I am not ordering out every time I get the urge. I just found the best combination of rice, chicken and spices to make a fried rice recipe we’ll all love. Let’s get cookin’!

What You Need to Make Easy Chicken Fried Rice
There’s really not as much to making chicken fried rice as you might think. It’s a super simple recipe that I’ve been known to make for myself for lunch when the kids were at school.
Here’s what you need:
- To make the rice:
- 4 cups water
- 2 cups uncooked Jasmine rice
- To make the chicken fried rice:
- 1 skinned and cubed chicken breast (can substitute 1 can of chicken, if necessary)
- Cooked rice
- 1 egg
- 1/2 cup sliced bell pepper (I like to use red and yellow for fun)
- 1/4 cup chopped green onion
- 1 cup snow pea pods
- 1/2 cup chopped carrot
- 1/2 cup diced tomato
- 1/2 cup chopped onion
- 1 cup mushroom
- 2 tbsp butter or stir fry oil
- 1/4 cup soy sauce
- 2 tbsp teriyaki sauce
- 1 tbsp minced garlic
- 1 tsp coarse ground sea salt
- 1/2 tsp black pepper

How to Make Easy Chicken Fried Rice
Step 1
The day before, combine your water for boiling the rice and your dried rice in a medium saucepan over high heat.
Bring to a boil and then reduce heat to a simmer. Simmer for 20 minutes, then remove from the heat. You can make your rice the same day, but I find that the day-old rice just makes a better fried rice dish.
If you do make your rice on the same day, I recommend letting the rice cook for a bit longer on the stove, about 25 minutes, to help dry out the rice a little more.
Step 2
Place stir fry oil (or butter), chicken, onion and garlic in a large pan over high heat.

Step 3
When the chicken starts to turn white and the onions get soft, add bell pepper, carrot, salt and pepper, green onion and allow this all to cook until the bell pepper is soft.

Step 4
Add the mushrooms, diced tomato, snow pea pods and egg. Stir until the egg is cooked.

Step 5
Add the rice and stir sparingly until mixed. Allow the rice mixture to cook for 7 minutes, stirring sparingly.

Step 6
Add soy sauce and teriyaki sauce, then stir sparingly until the rice is browned, about another 2-3 minutes, before enjoying.
