Easy Chicken Fajita Recipe

I can’t tell you how much my life has changed since learning how to make this easy chicken fajita recipe. It’s great for a quick weeknight dinner.

Honestly, I can have these fajitas on the table in less than 20 minutes, ready to assemble and enjoy.

The best part is that the kids love to gnosh down on a fajita. They can load it up with cheese, guacamole, sour cream, beans…anything they want.

And that makes it a great recipe in my book. Anything to get them to eat a good, healthy meal that’s not pizza, am I right?!

What You Need to Make Easy Chicken Fajitas:

I adore making chicken fajitas, even doubling the recipe sometimes so I can use the leftovers for quesadillas or taco salad the next day.

And it’s such a simple chicken recipe–definitely in my no-fail category. Basically, anyone can make these, as long as you can follow basic cooking instructions. Here’s what you need:

  • 2 lbs chicken legs and thighs, bone-in
  • 12-14 flour tortillas (you can use corn tortillas, but they don’t hold together as well, in my opinion)
  • 1 tsp cumin
  • 1 tsp garlic powder
  • 1 tsp salt
  • 1/2 tsp cayenne pepper
  • 1 bell pepper
  • 1 onion
  • 2 tbsp olive oil

How to Make Easy Chicken Fajitas:

Step 1

Slice chicken and debone it.

Step 2

Slice onion the long way into strips.

Step 3

Slice bell pepper the long way into strips.

Step 4

Add olive oil, chicken, bell pepper and onion to a pan over high heat to saute until the chicken is cooked through.

Step 5

Combine spices and sprinkle over the chicken mixture before serving with tortillas, sour cream and any other toppings desired!
