Cilantro Lime Chicken

One of my favorite easy weeknight dinners is Cilantro Lime Chicken. In just a few minutes, you can have a tasty chicken and homemade salsa!

If you’re not a big fan of dark meat (I don’t really have a preference), you can certainly substitute breasts for the thighs called for in this recipe. I would recommend, however, that you stick with the boneless version of any chicken you use.

It just takes so much longer (it feels like) to cook bone-in chicken.

For quick weeknight meals, I just always reach for boneless.

And who doesn’t love a quick weeknight meal?! I’ll do just about anything to shave off a few minutes of cooking so I can spend as little time standing in the kitchen as possible!

What You Need to Make Cilantro Lime Chicken

I just love making cilantro lime chicken, it’s such a simple chicken recipe that definitely falls in my no-fail category. Basically, anyone can make this quick weeknight meal, as long as you can follow basic cooking instructions.

Here’s what you need:

  • 2 lbs chicken thighs or breasts, boneless
  • 1/4 cup lime juice
  • 1 tsp garlic powder
  • 1 tsp salt
  • 1 bell pepper
  • 1/4 cup chopped cilantro
  • 1/2 chopped jalapeno, optional
  • 1 cup finely diced tomatoes
  • 2 tbsp olive oil

How to Make Cilantro Lime Chicken

Step 1

Place olive oil and chicken in a skillet over high heat.

Step 2

While the chicken is cooking, chop bell pepper, tomato and jalapeno. Combine them in a second small pan over medium heat to make a homemade salsa. You don’t want to cook it necessarily, but warming it and mixing it is the goal.

Step 3

Juice limes and chop cilantro, adding both to the chicken and stirring well.

Step 4

Flip the chicken when the bottom is cooked, then, when the chicken is cooked all the way through, remove from the stove and serve with the homemade salsa over the top.
