One-Pan Santa Fe Chicken Skillet

One of my favorite type of cooking is one-pan or skillet. I just love recipes like this Santa Fe Chicken Skillet that only takes one dish to make!

But it’s more than just the ability to make something that doesn’t require a ton of dishes afterward. It’s having a million different flavors all combining in the single pan to create a fantastic foodie experience.

I mean, who doesn’t love black beans, corn, and cheese with a little chicken breast and tomato?!

What You Need to Make a Santa Fe Chicken Skillet

If I could make this Santa Fe Chicken Skillet once a week and not feel like I was missing out on all the other amazing recipes I might make, I would. This is one of those recipes that I just never tire of!

And it’s such a simple chicken recipe, if you can open cans, this is pretty much in your wheel-house. Seriously, as long as you can follow basic instructions, you can definitely make this one-pan chicken meal.

Here’s what you need:

  • 2 lbs chicken breasts, deboned
  • 1 can black beans, rinsed
  • 1 can corn, drained
  • 1 tsp cumin
  • 1 tsp garlic powder
  • 1 tsp salt
  • 1/2 tsp cayenne pepper
  • 1 bell pepper
  • 1 onion
  • 2 tbsp olive oil

How to Make a Santa Fe Chicken Skillet

Step 1

Place the chicken flat in the bottom of a pan with the olive oil over high heat. While the chicken is sautéing, add seasoning.

Step 2

Top the chicken with a layer of tomatoes and corn, stirring until it simmers.

Step 3

Add the black beans and fold them in. Be very careful not to crush the beans.

Step 4

Add cheese in a layer on top and cover. Allow the cheese to melt (about 5 minutes) then serve!
