Breakfast in my house has definitely gotten more fun since I started making Chicken Migas periodically. So easy and tasty, I could eat them for any meal!

You’re not going to believe how little it actually takes to make this breakfast that everyone will love.

Even though this is traditionally only served with tortilla chips on top, the folks at your table can choose to add so many different things to customize their migas experience.

We’re talking salsa, ketchup, mayonnaise, diced tomatoes, lime, cilantro…and so many more. This is truly a customizable breakfast.

What You Need to Make Chicken Migas

Making chicken migas is one of those rare treats that I used to think only came from a restaurant. Turns out, you can make them at home!

And turns out that it’s such a simple chicken recipe that almost anyone can make this authentic Mexican breakfast, as long as you can follow basic cooking instructions. Here’s what you need:

  • 1 lbs shredded chicken
  • 8 large eggs
  • 8 corn tortilla chips
  • 1 tsp cumin
  • 1 tsp garlic, minced
  • 1 tsp salt
  • 1/2 tsp cayenne pepper
  • 1/2 onion
  • 1/4 cup chopped green onion
  • 2 tbsp olive oil

How to Make Chicken Migas

Step 1

Combine onions, garlic and seasonings over high heat in a skillet with the olive oil. Saute until the onion is translucent.

Step 2

Add chicken and cover, stirring periodically until the chicken is warm (about 5 minutes).

Step 3

Crack the eggs into a bowl and, with a spoon or fork, whip them.

Step 4

Add whipped eggs to the chicken mixture and stir continuously until the eggs are cooked throughout before serving with tortilla chips!
