Shredded Chicken Taco Salad

INGREDIENTS

chicken thighs and legs deboned bell pepper onion shredded cheddar cumin garlic powder salt cayenne pepper cherry tomatoes Romain lettuce cooked black beans avocado

STEP 1

Place chicken, sliced bell pepper and sliced onion in a pan over high heat. Sautee until the chicken is cooked all the way through.

STEP 2

While the chicken is cooking, slice your cherry tomatoes in half and slice your avocado into strips.

STEP 3

 Place chicken in a bowl and shred it using a hand mixer. Add seasoning and stir until the chicken is evenly coated.

STEP 4

Add Romain lettuce to the bottom of 4 bowls, then add about 1/4 cup of black beans.

STEP 5

Top the beans with chicken.

STEP 6

 Add all of the other toppings to make the salad your own!
