Do you ever just want a spicy chicken salad instead of your run-of-the mill? This Cajun Chicken Salad is just that. So full of flavor, with a little bit of bite, this is one of those recipes you’re never going to forget–and it’s just for a sandwich or cracker!

Seriously, it’s all sorts of tender and juicy, a little crunch of celery–it’s like a crazy fun twist on the traditional chicken salad.

I’ll be honest, sometimes that’s just what I want–a slight variation on my usual. Because chicken salad once a week for the rest of my life could get boring. But not if I mix it up.

And that’s what this recipe is all about–mixing up some cajun on your normal sandwich. Ah-mazing.

What You Need To Make Cajun Chicken Salad

This is a very simple chicken recipe that’s no-fail. Seriously, anyone can make these, as long as you can follow some basic cooking instructions. Here’s what you need:

  • 2 Whole Chicken Breasts
  • 1 tsp Seasoned Salt
  • 1/2 cup Mayonnaise
  • 1/4 cup Chopped Celery
  • 1/2 cup Cubed Cheese
  • 1/8 cup Chopped Chives
  • 4 cups Water (to boil the chicken in)

How to Make This Cajun Chicken Salad

Step 1

Add chicken and water to a medium sized pot over high heat. Bring to a boil and cook at a simmer for 10 minutes or until the chicken is cooked all the way through.

Remove chicken from the stove and drain off the broth.

Step 2

Using a fork and knife, or (which is my favorite way to shred chicken) grab your hand mixer and shred your chicken with it.

Step 3

Add shredded chicken, celery and seasoning to a small mixing bowl and stir to combine.

Step 4

Add mayonnaise to the bowl and stir until combined.

Step 5

Fold cheese into the mixture and serve!
