Ok. Before you laugh, you really have to try this Crack Chicken Salad. It’s the best way to eat a chicken salad, hands-down. So simple and tasty, with just a little bit of zing that sets it apart from the crowd.

And the best part is that it’s so simple, you’re going to laugh at how “out there” the name is–because it makes this chicken salad sound insane. When, really, it’s the most genius way to eat chicken salad ever invented.

Honestly, the best part about this recipe is how flavorful it is. You’ve got all the best parts of your traditional chicken salad, but then there’s a hint of ranch and some bacon. I am already drooling a little in my mouth.

I can’t wait for another lazy afternoon when the kids aren’t home so I can make another batch to enjoy all for myself. I mean, er–they’d love it, but the deal is, I just don’t want to share! LOL!

What You Need To Make Crack Chicken Salad

This is a very simple chicken recipe that’s no-fail. Seriously, anyone can make these, as long as you can follow some basic cooking instructions. Here’s what you need:

  • 2 Whole Chicken Breasts
  • 1/4 cup Mayonnaise
  • 1/4 cup Ranch
  • 1/4 cup Chopped Celery
  • 1/8 cup Bacon Pieces
  • 1/2 cup Chopped Pickles
  • 1 cup Cubed Cheese
  • 1/4 cup Chopped Chives
  • 4 cups Water (to boil the chicken in)

How to Make This Crack Chicken Salad

Step 1

Add chicken and water to a medium sized pot over high heat. Bring to a boil and cook at a simmer for 10 minutes or until the chicken is cooked all the way through.

Remove chicken from the stove and drain off the broth.

Using a fork and knife, or (which is my favorite way to shred chicken) grab your hand mixer and shred your chicken with it.

Step 2

Add shredded chicken, mayonnaise, celery and seasoning to a small mixing bowl and stir to combine.

Add in cheese to the mixture.

Then add bacon, pickles and chives.

Step 4

Top with ranch and fold-in to combine it all.
