One of my favorite meals is chicken flautas–but making them at home seemed unattainable until I broke it down and came up with this amazing easy chicken taquitos recipe.
So simple to make, and so fast–I was ready and done in about 20 minutes! How cool is that?! Quicker than if I ordered at a restaurant…
What really gets me excited is that the kids love my taquitos–which is something kind of amazing these days.
Because when they’re not begging for delivery, I’m one happy mom.
What You Need to Make Easy Chicken Taquitos:
This is a very simple chicken recipe that’s no-fail. Seriously, anyone can make these, as long as you can follow some basic cooking instructions. Here’s what you need:
- 1 1/2 lbs chicken thighs and legs deboned, cooked & shredded
- 1 cup shredded cheddar
- 12-14 flour tortillas (you can use corn tortillas, but they don’t hold together as well, in my opinion)
- 1 tsp cumin
- 1 tsp garlic powder
- 1 tsp salt
- 1/2 tsp cayenne pepper
How to Make Easy Chicken Taquitos:
Step 1
Heat about 1 to 1 1/2 inch of oil in the bottom of a frying pan over high heat. Combine seasoning and chicken and stir until the chicken is evenly coated.
Step 2
Lay out a single tortilla at a time. Place about 1/3 cup shredded chicken in the center of the tortilla. Spread the chicken out in a line from one side to the other, about 1/2 inch from the edge of the tortilla
Step 3
Add about 2 tbsp shredded cheese over the top of the chicken.
Step 4
Roll the tortilla closed and set aside. Repeat until all of the chicken is gone.
Step 5
Place 3-4 taquitos in the frying pan when the oil reaches 325-350 degrees. Cook on each side 5-6 minutes or until lightly browned.
Step 6
Allow to cool to the touch then enjoy with sour cream, queso or salsa!
