One of the recipes I love most at my favorite Mexican restaurant is chicken chile verde. It’s mildly spicy, tender and deliciously cheesy. So good.

Even if you’re not typically dedicated to eating everything with tomatillos in it, once you realize how quick and easy it is to make this recipe, you’re going to want to make it again.

You can seriously have it done in less than 15 minutes.

What You Need to Make Chicken Chile Verde

Basically, when I’m in a hurry, I can usually rely on making this easy chicken chile verde with a quick side of rice and a sliced avocado in just a few minutes. And if you use that quick rice in a bag, it’s just a ridiculously easy recipe.

Seriously, this is so simple, it’s definitely in my no-fail category. Basically, anyone can make chile verde chicken, as long as you can follow basic cooking instructions and you have a skillet.

Here’s what you need:

  • 2 chicken breast, boneless
  • 1 cup cream cheese
  • 1/2 cup salsa verde
  • 1 tsp cumin
  • 1 tsp garlic powder
  • 1 tsp salt
  • 2 tbsp olive oil
  • 1/2 cup shredded mozzarella or Monterrey jack cheese
  • 1/4 cup chopped green onion or cilantro for garnish

How to Make Chicken Chile Verde

Step 1

Add the olive oil and chicken breast to a skillet over high heat.

Step 2

When the chicken has cooked on one side, flip it, then add the cream cheese, seasoning and salsa verde.

Step 3

Cover and stir periodically to allow the cheese to melt completely.

Step 4

Add shredded cheese chopped green onion before removing from heat and serving!
