I adore Italian food, but take out can be a whip. So, I started making homemade chicken cacciatore–and it’s better than any restaurant! The meat is juicy and the sauce is fresh.

It’s like having a chicken restaurant in your kitchen–where you get the freshest they serve, no waiting under the heat lamps. Plus, I can choose my noodle, which is kind of amazing, if you ask me.

And I’m not going to lie, I can also manage how much cheese gets included on top–or none at all. Because, you know, I am all about the cheese with chicken, most times, but this chicken cacciatore just doesn’t need it.

When I hit my local Italian restaurant, though, they want to add a whole slab of mozzarella. So odd. Me? I’m just going to make my chicken cacciatore sans cheese.

But that doesn’t have to be how you do it. That’s what’s so fantastic about homemade chicken cacciatore–you can choose how much cheese experience you want with it. Woohoo!

What You Need to Make Homemade Chicken Cacciatore

If you’re all about this recipe, but aren’t sure you can make it, trust me–you’ve got this. Seriously, if you can follow simple directions, this recipe is right up your alley. Here’s what you’re going to need:

  • 4 Chicken Breasts
  • 2 tbsp Olive Oil
  • 1 cup Onion, diced
  • 1 cup Red Pepper, diced
  • 1/2 cup White Wine
  • 2 tbsp Garlic, minced
  • 2 cups Stewed Tomatoes

How to Make Homemade Chicken Cacciatore

Step 1

In a skillet over high heat, add the olive oil followed by the chicken, garlic, red pepper and onion.

Step 2

Cook until the chicken is lightly browned on both sides, then add the white wine and stewed tomatoes.

Simmer until the sauce begins to thicken, about 5 minutes.

Serve over pasta.

If you love cheese, yoa gu can add a slice of mozzarella or some parmesan. But that’s totally optional.
