Chicken Quesadilla Recipe

Before I was blessed with kids, I had no idea how much a tortilla with chicken and cheese would be so well-loved. But this chicken quesadilla recipe is one of those that my kids will eat no matter the day, time or weather.

They just love quesadillas for some reason–and because of that, I do too!

Plus, chicken quesadillas are just so very easy to make. You can use leftovers from making chicken fajitas or taco salad. Or you can make a whole fresh batch of chicken and make a mess of quesadillas for a big party–in just minutes.

What You Need to Make Easy Chicken Quesadillas:

Like I said, this is so fast and easy–you really can’t mess it up. As long as you can follow some basic cooking instructions, you’ve got this in the bag. Here’s what you need:

  • 1 1/2 lbs chicken thighs and legs deboned
  • 1 bell pepper
  • 1 onion
  • 2 cups shredded cheddar
  • 12-14 flour tortillas
  • 1 tsp cumin
  • 1 tsp garlic powder
  • 1 tsp salt
  • 1/2 tsp cayenne pepper

How to Make Easy Chicken Quesadillas:

Step 1

Slice your bell pepper, onion and chicken into small bite-size portions.

Step 2

Saute the chicken onion and bell pepper over high heat until the chicken is cooked throughout.

Step 3

Lay a flour tortilla out on a pan or griddle over medium heat. Add a layer of cheese, chicken, onion and bell pepper on the tortilla.

Then press another tortilla on top.

Heat until the cheese is melted and then flip the quesadilla, warming the other side until toasted.

Step 4

Remove your quesadilla from the griddle, then cut into quarters with a pizza cutter and enjoy!
