1 ½poundsBoneless skinless chicken breast tenderloins
⅔CupSour cream
½CupParmesan cheese - grated
1CupMozzarella cheese shredded
¼teaspoonXanthan gum
2teaspoonsItalian seasoning
1teaspoonGarlic powder
Salt and pepper to taste
Chopped parsley for garnish
Instructions
Preheat the oven to 350 degrees.
In a bowl, mix together the sour cream, ¼ cup of the Parmesan cheese, xanthan gum, Italian seasoning, garlic powder and salt and pepper to taste until well combined.
Place the tenderloins in a well greased baking dish, and spread the sour cream mixture over them.
Sprinkle the mozzarella cheese and remaining Parmesan cheese on top.
Bake for 40 minutes.
Sprinkle with chopped parsley before serving.
Notes
Add Different Cheeses: Experiment with different cheese to make the meal your own, provolone, Gouda etc.
Short cut tip: No need to cut and debone your chicken breasts, buy them prepared in tenderloins already.
Variation tip: Diced tomato, is a nice addition to this dish.
Alternate cooking method tip: Feel free to cook this chicken in the instant pot on high pressure for 10 minutes and then quick release. Air Fry for 6 minutes per side at 400 degrees.
