Herbed Chicken Breasts

INGREDIENTS

– 1 tablespoon oil – 2 large chicken breasts – 2 tablespoons herb de Provence herb mix – 1/4 cup white wine – 1/4 cup chicken broth – salt and pepper

STEP 1: Add oil to a large skillet. Add chicken breasts to skillet and season both sides of each breast with 1/2 tablespoon herbs. Season with salt and pepper.

STEP 2:  Heat over medium high heat, browning each side, about 10-12 minutes total cooking time. Remove chicken from pan and keep warm.

STEP 3:  Add wine and broth to pan, scraping the bits on the bottom of the pan and mixing in. Heat over medium high heat until boiling.

STEP 4:  Continue to boil until liquid is reduced in half. Return chicken to pan and cook for 1 more minute. Serve with sauce on chicken.
