Creamy Chicken and Dumpling Soup

INGREDIENTS

– onion – carrots – celery – garlic – chicken – salt – pepper – olive oil –chicken broth – thyme – butter – flour – frozen peas – fresh parsley

DUMPLINGS: – flour – butter – baking powder – salt – heavy cream

STEP 1: Chop vegetables.

STEP 2: In a large soup pot with a lid, place olive oil and heat. Sear chicken in batches, then set aside.

STEP 3: Add the onion, celery and carrot to the pot and saute for about 5 minutes.

STEP 4: Add chicken broth and stir to incorporate the flour and broth. Bring to a boil and add chicken back to the pot. Let it simmer for the soup to thicken. 

STEP 5: Make the dumplings. In a medium bowl, combine the flour, baking powder and salt.

STEP 6:  Add the melted butter and cream and mix until completely incorporated.

STEP 7: Once the soup is thickened, add the frozen peas. Stir.

STEP 8: Drop dumplings 1 tablespoon at a time into the simmering soup. Cover and cook for 17 minutes. Do not open the lid.

STEP 9: Serve hot with fresh parsley for garnish. Enjoy!
