Chicken Migas Authentic Mexican Breakfast Recipe

INGREDIENTS

shredded chicken eggs corn tortilla chips cumin garlic salt cayenne pepper onion green onion olive oil

STEP 1

Combine onions, garlic and seasonings over high heat in a skillet with the olive oil. Saute until the onion is translucent.

STEP 2

 Add chicken and cover, stirring periodically until the chicken is warm (about 5 minutes).

STEP 3

Crack the eggs into a bowl and, with a spoon or fork, whip them.

STEP 4

Add whipped eggs to the chicken mixture and stir continuously until the eggs are cooked.

STEP 5

Serve and enjoy!
